Conching is the process necessary for the production of the highest quality natural chocolate. When conching, the viscosity of the chocolate is reduced by heat exchange and intensive mechanical mixing and complete homogenization is achieved.
Conching is a lengthy process, as a result of which excess moisture evaporates from the chocolate mass, tannin residues evaporate, and cocoa solids are rounded off. The consistency of chocolate at the same time becomes more uniform, and the taste is more delicate, "melting".
In this process, moisture, volatiles are removed and the aroma and taste of chocolate are intensively formed.
